Currently in development and heading towards an Early Access release, MicroTown looks pretty sweet with an aim to be relaxing while you build a village.

Since it has Linux requirements up on Steam, I spoke to the developer to ensure that's correct and it is, as it's coming to Linux. You can see an early preview of what to expect below:

Build and manage your growing town in this relaxing village construction and management simulator with focus on production chains, villager desires and light combat elements.

Start with nothing and grow into a bustling town. Gather and process resources, establish supply and production chains, maintain your villager needs, and defend your settlement.

Collect and record knowledge, research and advance through technologies, and unlock new materials and professions.

For the upcoming Early Access version they've already implemented random terrain generation, 30+ unique buildings, 30+ unique items, villager AI and a tech-tree. Over the course of development they will be adding in various scenarios, expanded production chains, trading, in-depth villager needs and more.
