To preface, I prefer not to use Steam. I only launch it if I absolutely must, for example to play some Half-Life deathmatch and other games exclusively requiring Steam to run in the background.
And that is why I used Lutris as my prefix manager, to quickly set up per-game prefixes, and create shortcuts to non-Steam games in my application launcher, which are most of the games I play. Nothing more.
I did not sign-in to any services such as GOG, I did not use the dysfunctional install scripts, nor did I let it manage any Wine versions for me and quite sternly instructed it to stop downloading patched versions of Wine. I manage Wine builds myself.
Basically, to install new games, I downloaded their installers (usually DRM-free installers from my GOG account), clicked "Add locally installed game" in Lutris, filled in the game info and paths, bosh.
Recently, I have been trying out Heroic Games Launcher as an alternative, and the fact that it could let me play No Man's Sky via GOG multiplayer without having to use Galaxy is a huge plus. But it uses Electron and it's not as snappy or minimalistic as I'm accustomed to with Lutris.
It takes a lot of clicks and squinting to find the same prefix settings, such as setting environment variables and Wine DLL overrides.
Not a bad piece of kit though, not at all. I really like it otherwise, and I think I'll stick with it if there aren't any alternatives that are more lightweight!
With all that in mind, what alternatives do we know of that can fill this void? That is, just local prefix management with in-depth quick tweaks like Lutris allows.

Or do it old-school, standalone Proton fork (or Wine) and winetricks?
Wasn't a huge fan of Bottles, forgot to mention that in the OP. It feels very cramped and doesn't offer the same level of customisation for each prefix. I get anxious when applications like this try to automate things for me, which is a me-problem! haha
Not a bad software though, I can see why people like it.
I noticed it will only use non-Steam fixed Proton, but that probably shouldn't be a big deal, I'll keep an eye on this project. Thank you whizse.
