From what I understand, then in Dwarfcorp (and in Towns, Minecraft, but not Gnomoria and DF), you have complete 3D structure represented by cubes. You can dig various patterns into it:
While this can't be done in DF (or you have this weird concept of "floors". This enables you to do 3D sculpting in much more efficient manner.

GTA1/2-like game with a good interactive city, enterable buildings and active police with MP (GTA1/2 from what I remember removed police from MP) could be quite fun.
