Monster Sanctuary from moi rai games is a great monster taming metroidvania, and now they're set to release Aethermancer into Early Access for more. It's going to enter Early Access on September 23rd.
More about it: "You are the Aethermancer, a skilled warrior with the ability to recruit and tame mythic creatures. Use your powers (and your furry friends) to win strategic turn-based battles, defy death, and fight through the fractured ruins!"

Progress from the demo will carry over too which is nice. And it should have Native Linux support. They expect it to remain in Early Access for at least a year to add in more monsters, more biomes to explore, the full end-game and more.
