As already mentioned, the best option is to install dhewm3 using your package manager; ubuntu seems to have it on the standard repos (fedora has it in rpmfusion-free).
When you launch 'dhewm3' from the command line, it looks for the game assets here:
~/.local/share/dhewm3/
All you need to do is to define symlinks from the folders inside
$YOUR_STEAM_LIBRARY/steamapps/common/Doom 3

That's what got me interested. So I picked up the game and now I got this error when running dhewm3
