You're using ubuntu. So, you can just install it with apt.

As already mentioned, the best option is to install dhewm3 using your package manager; ubuntu seems to have it on the standard repos (fedora has it in rpmfusion-free).
When you launch 'dhewm3' from the command line, it looks for the game assets here:
~/.local/share/dhewm3/All you need to do is to define symlinks from the folders inside
$YOUR_STEAM_LIBRARY/steamapps/common/Doom 3to that folder -- namely, the 'base', 'd3xp', 'Docs', and 'pb' folders.Here's the official FAQ on linking to the assets: https://github.com/dhewm/dhewm3/wiki/FAQ#where-do-i-need-to-put-the-game-data-files
