To find out of it's a GNOME extension you may disable all while gaming with this one-liner:

> gsettings set org.gnome.shell disable-user-extensions true

false brings em back.

Does I/O spike when stalls happen? It might be related to filesystem issues.

Your specs also don't mention if you have SSD, HDD, or combination and etc.
