That's... a lot of changes. Given the history of Stable updates breaking random things on the Deck, I'm almost scared to install it. Maybe I'll just keep an eye on the SteamDeck subreddit for a day or two before pulling the trigger.

Second thing I'd do is validate the game files through the config wheel menu and again try to launch it. Third, delete the shader cache and Proton compat data using zShaderCacheKiller. Not sure of the policy on external links here so just Google it. There are instructions on how to use it on the scripts github readme. After this step it will probably say you have to update the game. Do so and try to play again.
Last resort: uninstall the game entirely. Then before you install it again make sure you're forcing compatibility to the Proton Hotfix first.

I know they just shoved a low end PC into a nostalgic case but apparently you can plug in an external hard drive and install Windows/Linux on it. There's a separate "PC mode" bundle which actually has a custom Debian distro pre-installed on a USB thumbstick that it can boot into. Honestly I am still sitting here shocked that this thing even exists and I can actually buy it right now and find it on my doorstep in a week. I am very oddly tempted, if only to own a weird piece of gaming history that probably won't be around for very long. Hmmm!

Some of these updates, OS at least, they push to Stable are clearly different than the ones they push to the Beta channel. I was on the Beta 3.4 OS update and then updated to 3.4 Stable and it broke some things for me and fixed another issue I had with the keyboard crashing the Deck in Desktop.
I don't know why they would do that? If the build that's pushed to Stable isn't the last one that was being tested in Beta, keep pushing builds to Beta until you have a release candidate. And then push the final RC to Stable. They're introducing issues into Stable that shouldn't be there. No build that hasn't been thoroughly tested in the Beta should go out to the main public in Stable. This whole debacle with the frantic Christmas updates and bootlooping problem never would have happened if they had done this.
