Whether a Linux game is 32-bit or 64-bit is a bit beyond us since it's on the developer to build a game specifically for 64-bit architecture. Also, GameMaker for Linux doesn't come in 64-bits (that I know of) so that's an even taller order :)

You can turn CSMT on or off in Wine with the latest version of winetricks these days. Just fire up the winetricks GUI and you will see the setting for CSMT.

Also, CSMT in Wine (non-staging) is off by default for reasons such as the one you listed in your post.

Enable the Precursor ship in the very beginning and you will breeze through the initial stuff :D There's a reason why it's called in-game HMS I Win Button.

Is CSMT enabled by default in wine 3? Are all CSMT features enabled?
I remember trying Witcher 3 in wine 3rc2 and getting a lot of graphical aberrations that are typical in wine-staging when not using CSMT.
You can activate CSMT via winetricks these days :D Just make sure to update winetricks if you have an older version.

Just open up winetricks and you will see the option to turn on CSMT :)
