I believe systemd-boot and starting from ubuntu-minimal helps the boot speed for sure.
I don't believe it will be compatible with GNOME Shell extensions but based on mockups it will offer features that you would normally need extensions to access right out of the box.

I guess I do feel the same about trying to go back to 1080p from 1440p.

As for the GPU options the last year has been rough in that regards but it may be getting better soon.

It's pretty amazing though not crazy to use Linux for this since I think we have better support when it comes to using the hardware then Windows does since we've been shipping Linux on ARM for years (Thanks Android!).
XWayland 21.1.2 is out now with support for hardware accelerated NVIDIA on the 470 driver
