So moral of the story, seems if you update your nvidia driver and get the black desktop with mouse cursor and nothing else, try updating your kernel and reinstalling the driver.
For me X would not start at all, so my problem was not the same as yours. But as I said, the fix was quick and easy. I'm running kernel 4.10 by the way.

I don't have time for this, gotta mess around with it when I get home from work tonight. Basically after updating, I log in via the usual login screen and it goes straight to a black desktop with only a visible mouse cursor.

Gonna try reverting to 375.xx
I had to run sudo nvidia-xconfig to fix this. I guess we can't blame Mint if an unsupported Ubuntu PPA package causes problems. It's not likely they're tested on Mint at all.

I explained what I meant with my previous English comment.
An EU law prohibits from removing a software licence when you bought (or got gifted) software, be it digital or on disc (if it has not been explicitly only been rented).
Corporations seem to have a hard time accepting that they can't just override laws willy-nilly with their idiotic EULAs.

Adding all the driver/mesa PPAs at the same time doesn't seem like a safe thing to do. If you did this anyway, you should use ppa-purge to remove all but one of them. I recommend leaving either the ubuntu-x-swat one or padoka's stable PPA.
