Liam, can you clarify this statement:
With a Virgin Media internet connection that gives around 360MB down and about 36MB up
MB = Megabytes
Mb = Megabits
Mbps = Megabits per second (speedtest.net results are Mbps)

I can't help but wonder if the texture resolution and/or filtering is the same between the versions, even with the exact same settings. Can all these differences be attributed to the lighting alone?

It honestly doesn't look terrible on Mesa, but it is absolutely worse. It was claimed in one of the bug reports from years ago that some puzzles are unsolvable from the borked colors/lighting/shadows. No idea if this is still true with today's Mesa.

Dead on arrival might be a bit harsh but things sure aren't looking great right now for Stadia, or even in the near future. Interesting to see what happens.

Will game streaming become a thing or just another huge meh?
Can Google really compete with the gaming powerhouses like Valve, Sony and M$?

No need to do anything drastic.
While Debian Stable isn't really the best choice for gaming, there's a quick fix for mesa and amdgpu, just pull them from Testing. You can grab Wine directly from WineHQ repo. :)
Stable has some very specific use cases and I would really think about upgrading to Testing fully for a gaming rig.

I desperately want to believe Epic is being A Good Guy here, but there's that nagging feeling deep inside that I cannot shake. It's not quite "M$ hiding their current EEE stratagems in plain sight under the banner of 'Microsoft loves Linux'" level of apprehension... hmmm.
