How can someone create this? Pretty simple if you know a bit of programming and where to look, since the Steam Deck uses Linux (SteamOS) and so the majority of it is open source (apart from the Steam client).
This part is actually in that closed Steam client though - but it's somewhat hackable anyway because it's using HTML and JavaScript :P

LD_PRELOAD is used to inject the library that's usually responsible for Steam Overlay. I'm not sure what is it useful for under Gamescope as Overlay is handled in a completely different way there, but Steam tries to inject it anyway and the itch app doesn't like it.

All you need to run itch.io app in Gaming Mode is adding
LD_PRELOAD= %command%
to Launch Options.

In my experience, Arch is really stable for a rolling distro (although I'd like pacman to be a bit more robust, but it's generally good enough). However, it explicitly requires regular maintenance efforts, and not everyone is willing (or able) to do that.

Which is fine, there are different distributions for people with different needs.

Yup, it's also there on Humble. It was simply never uploaded to Steam, as the game was released before Steam supported GNU/Linux.

No, it's SteamOS and it has everything preinstalled that Steam Deck devs wanted to have. It's not unthinkable that early images could contain lots of dev tools, debuggers, compilers, debug symbols or even random cruft that won't be there in the final release.

(OTOH, containerizing it will probably be the easier and safer way to support it, so...)
