It's hard to pull me away from Bloons TD 6, but Terrorformer TD has managed to do it. A tower defense game where you constantly tweak the battlefield as time goes on.

With a map that erodes and grows as the game progresses, Terrorformer TD puts a rather unique spin on the tower defense genre.
