To be honest, Bungie are not necessarily being unreasonable here. They seem to be saying that they have their hands full with keeping up with cheating now on the platforms that they support. At this time it is not worth it for them to extend support to another platform with possible new, unknown cheating methods.
Of course, if the market gets big enough, then it may become worth it for them to support the Steam Deck. Also, the effectiveness of client-side anti-cheat is debatable.

If he had said, 'We'll be shipping tens of thousands,' or 'We'll have shipped tens of thousands,' then it would have to be twenty thousand or more he was talking about. However, he said, "We'll be in the tens of thousands." Technically, that only means at least ten thousand. When you go from 9,999 to 10,000 you leave the thousands and enter the tens of thousands, and when you go from 99,999 to 100,000 you leave the tens of thousands and enter the hundreds of thousands.
All that aside, I doubt they will go from only 10,000 the first month to over 100,000 the second month, which would be ten times the production. Most likely there will be several tens of thousands shipped the first month and well over one hundred thousand the second month. If they made 80,000 the first month and only tripled production the second month they would be at 240,000 for the second month (or 320,000 total). That seems a more realistic way to view the comment (though the numbers could be less and still work).

I picked up the Overwhelmingly Positive Gems bundle on Humble recently.
Steam lists three of the titles with native versions:
Kathy Rain: The Director's Cut
Huntdown (for some reason not listed as Linux native on the bundle page)
Finding Paradise
All other titles are rated Gold or higher on ProtonDB, though I didn't look into the specifics of what tweaks might need to be made for the gold ones.

A quick google finds me a Forbes article saying that anger over Destiny 2 cheating is reaching a tipping point.(Apr 2020)
And a player one article saying that cheaters have returned despite new anti-cheat measures (Oct 2021).
I assume the majority of these cheaters are on the Windows platform.

There was a time that I was somewhat interested in playing Destiny 2, though I never have. At this point, though, I had already pretty much lost interest. I'm not sure if I could become interested again or not. I'm not going to buy it to play on Windows, though, that's for certain.

Unfortunately, I don't remember where in this 2 hour video he talks about it. I'm not even sure it's the right one since I have watched all of his Steam Deck videos.

I personally would like to see SteamOS 3 running properly on my Aya Neo Pro and on a living room PC, so I could be judging everyone by myself. Right now, though, ChimeraOS is already pretty good for a living room PC, though not as good for a handheld PC because of the lack of power management tools.

So people are eager to get it to run on a living room PC or a handheld PC other than the Steam Deck, such as an Aya Neo or OneXPlayer. There could be a few people who have a dedicated gaming desktop that will find it appropriate, but I think the majority of Linux desktop users would prefer something else on their regular desktops. Of course, there are always those who just want to experiment with every new distribution.
