Reading the comments on fig.co it looks like they have taken way longer than expected and have had to do a deal with a publisher in order to keep developing, I would speculate that the release platforms are an indication of the publisher they've done a deal with.

- they said during/shortly after the Kickstarter there would be simultaneous releases of alphas and betas on all platforms
- more recently they said "Right now, it's best for us from a development perspective to focus on one platform and get the game pretty far along (probably almost done) before doing any porting work."
- backers (civilly) expressed some outrage at this change of plans
- they admitted their mistake and now have a guy who is fixing all the Mac and Linux specific bugs
- once everything is working releases will be simultaneous as originally promised
- they have said the next Windows preview release will be held until all three platforms are ready, but I have not checked they kept their word on that

I've played Rise on the PS4 and it's more of the same but bigger and better, can't wait to buy this for Linux.

I think it's important to remember that Aspyr initially weren't going to release Civ VI for Linux, perhaps because they knew the updates would be a low priority for them. Next time time a publisher tells us they don't want to release a Linux version because they won't be able to give it full support we can use this example to help decide what it is we really want.
It's also likely that most of their resources in recent months have gone towards the mobile port of Civ VI. Could be a big money maker for them.
Also worth noting I have played three times as much Civ V over the last month as Civ VI because I can play that one together with my friends.
