I know one of those gives you TNT, but I forget which one. Unified Inventory gives you a good crafting guide in any case, so you can see up front what's possible to make.
Ethereal has a crystal shovel you can make (after collecting crystals from special biomes) that allows you to pick up things like dirt with grass on it without it reverting to regular dirt. Good for "seeding" grass on an island or greening a rocky area.
Farming_redo can be good if you're looking for a source of cotton to make wool out of (Minetest logic, lol). There's probably more, but that's the stuff I'm familiar with.

I've never played Minecraft itself, aside from a short time puttering around in Pocket Edition to see what all the fuss was about.
On the other hand, I've played a bunch of Minetest on my own and friends' servers, and it's fantastic. Even at its most basic I enjoy what it's got to offer, and the plugin/modding systems allow for huge variations in style of play. And all community driven, too.

All the stuff you mentioned, plus government-specific privacy concerns, scaling while not breaking rulesets on existing switches, dealing with bandwidth overhead that was already trouble when everyone was in the office and is now getting maxed out all the time, etc. One department was only allowing half an hour VPN per day to employees who weren't doing mission-critical work. I can only imagine what mid-sized businesses are going through right now to deal with this stuff.

Chronicon, mostly. It's fun, although so far not very challenging on Normal. I've been killed a grand total of once, after breezing through every boss in Act 1 without even looking at my health bar. But even so, running around just mowing down everything in my path can be pretty amusing.

Just tried it and...it's not grabbing me. Maybe I haven't played it enough to find the "fun" yet, or I'm just not in the right mindset, so I'll try again later.
I will say it does a very poor job of explaining how to sneak or use cover. I got through those parts of the tutorial and still don't know.

Looking up their platforms, I see Playstation and Xbox listed. Which means physical copies need to be manufactured, and this is kind of a bad time for non-critical manufacturing. Plus, I would imagine with the increasing number of people losing work that's potential sales that might be going out the window, especially if they're looking at a release when the US is expected to be hitting much higher numbers than they are now.
The Last of Us 2 is doing the same thing, except they've put release on hold indefinitely until things calm down.

I'm feeling a strong Enter the Gungeon riff in the level design, which they're handling in a much different fashion of course. I wonder if that Ancient Revolver the player picks up in the video is a callback of sorts.
