There is no reason it shouldn't work on desktop with GE-Proton 7-26.
The only thing that is really different as far as "steamdeck compatibility" goes is the small screen and controller buttons.

Well a lot of games already run better on Linux, and given how Valve should be able to optimize the OS specifically for the hardware and that windows will not be so optimized I would be surprised if windows is noticeably faster at anything.

I like the idea of this, it would make it easier to run mod managers or other executables you might run along side a game than some other methods.
However I have had problems running things that run fine in Lutris, not sure if it a problem due to Flatpak installation or I just don't know how to use bottles properly.
