One of the few games I was kind of underwelmed with on the Deck. Enjoyed the game and imagined it would be kind of awesome to play portable, but somehow it's rather meh...

Yeah. Does, for example GOW feel alot better with 40hz.
Sadly Valheim drops down to 38 for me, no matter what options I selected so far. Would offer pretty much anything but vegetation quality, but even that doesn't make it better.
Have you tried with sfr?

No, it seems like I can't change the ingame resolution to anything but 1280x720, 1280x768 or 1280x800 anyway :7

Actually 40fps would feel 50% better than 30fps. That's because 30fps is 16.67ms (1/30) and 40fps is 25ms (1/40). 40fps is actually the midpoint between 60fps and 30fps so it's a major improvement even if it doesn't sound like it.
1/30 would actually be 33ms, 1/40 are 25 and 1/60 are 16,67...
so diffs
30vs40:8ms
40vs60:8.33
30vs60:18.33
Doesn't devalidate your point, frametime distance is pretty much halved.

Me and my friends are waiting eagerly for enough new content to start another playthrough, but since our first playthrough right after release not too much has changed unfortunately...if you don't want to resort to heavy modding that is.

Hopefully the Mistlands update will arrive soon and will blow our minds :D
I fear I'll never even finish the content already included, anyway...
I'm more waiting for Valve to drop more nuanced synced frame limiters or them starting to optimize it enough to run at 60 FPS on deck, as that's my prefered way to play this game by now :D

Steam Deck currently means SteamOS3, which is a superb OS for the form factor but can have some caveats, especially if not docked. I'm really glad he gives Deck specific hints.

I'm currently considering buying Cyberpunk2077 from GOG, as it's a LOT cheaper from there then from Steam. How much hassle will that be / are there any caveats other then having to install a launcher like Heroic?

Also, is heroic really only for these two services or is it possible to sideload apps from other sources? EDIT: Just saw this is a planned feature, sorry.

As someone who is a Linux nerd for over 20 years by now and can decide weather to use Linux or Windows at work, I can tell you it's not that easy. The fact that Linux can be restricted a lot means corporate admins will do that. Also, corporate workstations are using up to 10 years old distributions. It's a nightmare. No one I work with chooses Linux at home because of our experience at work, rather contrary. People take those restricted environments as "That's linux. Reliable but missing features and comfort. It's fpr Servers and CAD." as granted.
Ultimately that's another reason why flatpak etc. are so important. When distributions with flatpak make it to these spaces, it will extend usability a LOT. Yet there will still be other hefty restrictions making everyone mad.
