4. Inside compatdata there will be a folder with the correct Steam App ID — simply delete the folder.
You might want to add a step before that where you backup any potential savegames that are stored in the prefix.

It's been rather unstable for me. Several crashes is a short time, all related to fmod.

Just finished it. Worked perfectly for me. I enjoyed it, but it's far away from the quality that Portal Stories: Mel managed to achieve. But the credits were only from one person, so it's not reasonable to think it could be matched. The new portal mechanic is genius. There are puzzles in there that have you seeing nothing but question marks for a while. Especially the first half has some fantastic puzzle design. It does kind of drop later. As if the inspiration was running out. Especially the last one was a bit of a joke. Unless it was intended as a joke. Well, still a joke then.

Still, well worth the time if you enjoy some more portal puzzling!

VR is absolutely insane, I am officially a convert and it works mostly great on Linux

Well, basically there are no VR games for the Linux desktop outside of Steam. But yes, right now the SteamVR headsets require Steam to run even for software launched outside of Steam itself.

There is semi-functional work ongoing to make it possible to use HTC Vive and Occulus headsets without SteamVR via the OpenHMD and related projects though.
Non-steam games work though. A native non-steam build of a Unity VR app will pick up SteamVR just fine. And I've tried quite a few things from itch.oi as well. You can even add a Windows game/program as non-steam game and run it with proton.

I'm wondering if it would be the same with the Valve Index? Aside for the price, that's the main reason why I'm hesitating.
My ability to tolerate continues motion changed day by day. Usually I took a 2 minute break after half an hour and didn't do more than 2 or 3 hours total. That was on an index at 120 Hz. Games without motion (like Groove Gunner) didn't affect me at all. Aside from getting physically tired. :)
